Michelin star chef designs dishes for F&B concept at Fiumicino Airport

Multinational catering company Autogrill has opened a new wine and fish bar named Assaggio in Terminal 3 (T3) at Rome Fiumicino Airport in Italy.

The restaurant boasts three dishes personally designed by Michelin star chef Cristina Bowerman, including 65° egg, mozzarella di bufala campana and potato in a pan; mezze maniche (pasta) filled with romesco sauce, mozzarella water and almonds; and finally diced avocado, trout, pink pepper, tomatoes and sesame seeds. To complement these dishes, passengers can choose from some of the finest wines in Italy, curated by renowned wine producer ZONIN1821.

Assaggio is the latest offering to be introduced to the newly renovated food and beverage (F&B) area in T3, following the opening of a second Bistrotmarket concept, a second Rosso Intenso food and wine bar and the first Kimbo Caffè Espresso da Napoli.

Bowerman said, “I’m very happy to have worked with Autogrill again and created a prime choice fish and green menu to pair with the best from Italian wineries. I think it’s important that a company like Autogrill wants to be constantly investing in the development of innovating food concepts that are fast but quality and capable of elevating travelers’ food experience to higher levels of excellence.”
